Green vegetables are tender, succulent, flavorful, sometimes tangy, savory, nutty, sweet, or bitter; most can be eaten raw in salads, or lightly steamed with butter, salt, and pepper.
They contain many nutrients including minerals like iron and calcium, folic acid and B and C vitamins (among others). The chlorophyll in green vegetables is closely related to the hemoglobin in our own blood, making lightly cooked green vegetables a blood-builder for fitness, healing, or anemia.
